Turkey Sausage Pizza

Like I mentioned before, I absolutely LOVE LOVE LOVE LOVE pizza. It’s probably one of my Top 10 favorite comfort foods – especially if it’s a traditional italian sausage pizza…

I’ve been researching how to make italian sausage the healthy way and realized that the distinct flavor of sausage comes from the concentration of fennel seeds mixed into it – so regardless of what type I meat I use, I could definitely create the flavor of italian sausage without using the traditional pork.

Adapted from a recipe I found from TasteOfHome.com, I added a few personal touches to the flavor of the sausage (this is now my go-to recipe for whenever a recipe calls for italian sausage).  Then, I made a simple marinara sauce, slathered it on my usual Panini Slims halves from Trader Joes, sprinkled sausage and cheese, baked in the oven for 15-20 minutes, then BAM! – delicious sausage pizza that’s healthier for you (sorry, I couldn’t resist using the Emeril Lagasse reference…hehe).

(makes 16 slices)

For the Italian Sausage:

20.8 oz. 93/7 lean ground turkey
2 tsp. crushed fennel seeds
1/4 tsp. cayenne pepper
1/2 tsp. italian seasoning
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. sweet paprika
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. stevia

 For the marinara sauce:
1 cup tomato puree
1 tsp. olive oil
1 tsp. crushed garlic
1/2 tsp. italian seasoning
1/2 tsp. salt
1/4 tsp. pepper

12 oz. light mozzarella cheese
2 packages of Trader Joe’s Panini Slims

1.  In a large bowl, mix ground turkey and all spices until well-combined.  Cover and let sit in the refrigerator for at least 24-48 hours.
2.  In a skillet under medium high heat, saute ground turkey until browned and all juices have evaporated.  Set aside.
3.  In a small saucepan under low heat, saute garlic in olive oil for 30 seconds until fragrant.  Add tomato puree and spices and stir until sauce begins to bubble.
4.  Preheat oven at 350 degrees F.
5.  On two baking sheets, line 8 Panini Slims halves.  On each Panini Slim half, layer 1 tbsp. tomato sauce, 1/4 cup mozzarella cheese, and 1/4 cup cooked ground turkey sausage.
6.  Bake for 15-20 minutes until cheese has melted and bread is slightly toasted on the edges.
